Chicken Rice and Broccoli Cassarole (no can soup here!)


This is an easy peasy recipe that is GREAT for a large family AND your children can help prepare it. You can make this in the morning and bake off after work or EC activities. If you are making a dish with rice save time and make extra to use in this dish. My 11 year old daughter is in training and this was her first Official meal she made alone. With my guidance and prior training of course!  T and T Gourmet Cuisine Signature Dish. Makes about 12 servings.

Jasmine rice 9 cups cooked in chicken broth
2 lbs Organic Boneless Chicken Breast cooked and diced
2 Lbs. fresh or frozen Broccoli
2 bags of shredded cheddar
Whole med to large onion chopped
4 cloves garlic chopped
4 to 6 Tbl butter
4 Tbl flour
Half and Half about 2 cups
Organic Chicken Broth about 2 cups
Flour
Salt
Pepper
Sweet Paprika
Preheat oven to 375
In a large cast iron skillet, Cook chicken in olive oil. Season to taste with S &P
Remove, cool and dice
Add butter
Cook onions and garlic for about 5 mins
Add flour cook about 4 mins
Wisk in half and half and broth until thickened.
Season with Salt, Pepper, Paprika to taste
Mix all ingredients in to cream mixture and pour into buttered baking dish
Top with cheese
Bake 30 mins or until cheese is bubbly


SIDE NOTES:
Use good quality olive oil
If using frozen broccoli cook separately and drain
If using fresh can cook with rice
Use what ever rice you have in your pantry
Add more liquid if cream mixture is too thick
